Celebrate love with Spice, Tattinger and a sweet surprise

During Valentine's Week, from Tuesday 10 February to Sunday 15 February, Spice by Blake is all about enjoying together. Not a standard Valentine's dinner, but a culinary experience in which daring Balinese flavours, sharing and discovery are central.

The cuisine at Spice by Blake brings together distinctly Balinese influences with sophistication and comfort. Dishes are made for sharing, the atmosphere invites you to stay and every detail revolves around experience. Whether you opt for an intimate dinner, a sumptuous lunch or a spontaneous night out, Valentine's Week here feels like a time to truly be together.

To make this week extra special, we are celebrating our Taittinger ambassadorship. During Valentine's Week, you will receive €25 off any bottle of Taittinger of your choice. Champagne is the perfect companion to an evening of flavour and connection.

In addition, we are serving this week at all menus a special Valentine's Day dessert, exclusively created by our chef. A sweet ending that completes the dinner and invites you to share.

Spice by Blake opens in Rotterdam: a modern Balinese dining experience with character

Spice by Blake, the culinary concept of Masterchef Blake Thornley (known from the renowned Mozaic in Ubud, Bali), will soon open its doors in Rotterdam. After its success in Bali, Spice by Blake now brings its bold, contemporary vision of Balinese cuisine to the Netherlands: distinct flavours, pure ingredients and an energetic, accessible experience.

Located in the heart of Rotterdam, Spice by Blake is not a traditional fine dining restaurant, but a modern dining experience where comfort, creativity and sophistication come together. The cuisine honours the rich culinary traditions of the Balinese archipelago and translates them into the present with a contemporary signature. The menu consists of snacks, sharing plates and dishes that invite exploration together, each carefully built around balance, spice and quality.

An ode to the Spice Route

Spice by Blake is all about the story behind taste. The menu is inspired by the centuries-old Spice Route and shows how Balinese spices, techniques and traditions come alive in modern dishes. High-quality ingredients and attention to provenance are used, without unnecessary complexity.

“With Spice by Blake, I want to show how versatile and powerful Balinese cuisine is,” says Blake Thornley. “It is a cuisine full of soul, history and distinct flavours. In Rotterdam, we bring that energy together in a setting that feels relaxed, but where every detail is right.”

From Bali to Rotterdam: the chief team

The creative vision of Spice by Blake is led by Blake Thornley. In the Netherlands, this vision is brought to life by chef Axl, who is responsible for the daily kitchen and culinary level in Rotterdam. He is supported in this by chef Brandon, with whom he forms the permanent chef team.

Prior to the opening, Axl and Brandon travelled to Bali, where they trained for two intensive weeks under the guidance of Blake Thornley. During this period, they immersed themselves in Balinese flavours, techniques and the use of spices, with the aim of translating the essence of Spice by Blake authentically and consistently to the Netherlands.

Contemporary, energetic and casual

Spice by Blake is distinguished by its casual sophistication: no formal fine dining, but a stylish and warm environment where quality, experience and hospitality are key. The restaurant is suitable for an early evening, shared dining at long tables or a lively evening of cocktails and good conversation.

With Spice by Blake, Rotterdam gains a new culinary destination aimed at guests who love distinct flavours, international influences and an experience that goes beyond the plate.

Ají will remain open until Boxing Day, then temporarily close its doors for a special transformation

Restaurant Ají, for years a culinary destination on Pannekoekstraat where the flavours of Latin America and Asia converge, is entering the final phase of a special chapter. Until Boxing Day, Ají will remain open as guests know and love it. After that, the restaurant will temporarily close its doors for a sweeping, tasteful transformation.

Because while Rotterdam ushers in the new year, chef Axl and Brandon travel to Bali. There, they will train intensively for several weeks under master chef Blake Thornley, known from Mozaic Ubud and renowned worldwide for his refined, adventurous cuisine. During this period, Ají will undergo a culinary transformation in Rotterdam to get ready for a new culinary identity.

Ají becomes... Spice by Blake

In mid-January 2026, the restaurant officially reopens as Spice by Blake: a new name and a new era, but with the same passion for exceptional flavours, hospitality and the merging of cultures. The menu will have a distinct Balinese signature, with sophistication and storytelling on every plate.

A tasty farewell, one more month of Ají as you know it

For regulars and newcomers alike, December is the last chance to experience Ají in its current form. A month to make memories, taste favourite dishes one last time and enjoy the kitchen's familiar, bold signature together.

And of course: Ají is also fully open during Christmas this year. Guests can join us on Christmas Eve, Christmas Day and Boxing Day for a festive lunch or dinner full of warm, distinct flavours.
