After its success in Bali, Spice by Blake now brings its bold, contemporary vision of Balinese cuisine to the Netherlands: distinct flavours, pure ingredients and an energetic, accessible experience.<\/p>\n<p>Located in the heart of Rotterdam, Spice by Blake is not a traditional fine dining restaurant, but a <strong>modern dining experience<\/strong> where comfort, creativity and sophistication come together. The cuisine honours the rich culinary traditions of the Balinese archipelago and translates them into the present with a contemporary signature. The menu consists of snacks, sharing plates and dishes that invite exploration together, each carefully built around balance, spice and quality.<\/p>\n<h3>An ode to the Spice Route<\/h3>\n<p>Spice by Blake is all about the story behind taste. The menu is inspired by the centuries-old Spice Route and shows how Balinese spices, techniques and traditions come alive in modern dishes. High-quality ingredients and attention to provenance are used, without unnecessary complexity.<\/p>\n<p>\u201cWith Spice by Blake, I want to show how versatile and powerful Balinese cuisine is,\u201d says Blake Thornley. \u201cIt is a cuisine full of soul, history and distinct flavours. In Rotterdam, we bring that energy together in a setting that feels relaxed, but where every detail is right.\u201d<\/p>\n<h3>From Bali to Rotterdam: the chief team<\/h3>\n<p>The creative vision of Spice by Blake is led by Blake Thornley. In the Netherlands, this vision is brought to life by chef Axl, who is responsible for the daily kitchen and culinary level in Rotterdam. He is supported in this by chef Brandon, with whom he forms the permanent chef team.<\/p>\n<p>Prior to the opening, Axl and Brandon travelled to Bali, where they trained for two intensive weeks under the guidance of Blake Thornley. During this period, they immersed themselves in Balinese flavours, techniques and the use of spices, with the aim of translating the essence of Spice by Blake authentically and consistently to the Netherlands.<\/p>\n<h3>Contemporary, energetic and casual<\/h3>\n<p>Spice by Blake is distinguished by its <strong>casual sophistication<\/strong>: no formal fine dining, but a stylish and warm environment where quality, experience and hospitality are key.
