Chef Blake Thornley, internationally acclaimed master chef, believes that spices shaped the world, even before the World Wars. With Indonesia being one of the world's richest countries in spices and flavours, we highlight this diverse and ancient cuisine with us.
Chef Blake Thornley
From New Zealand to Bali and now to the Netherlands
Born in New Zealand, Chef Blake began his culinary career at some of the world's finest restaurants, including Martin Bosley's in Wellington. He later worked at Vue de Monde in Melbourne, one of Australia's most iconic restaurants, where he honed his technical precision and creativity. In Bali, he continued to build his reputation as a master chef at the renowned Mozaic Restaurant in Ubud, known for its innovative cuisine and numerous awards.
In 2019, he and his teacher opened Spice by Chris Salans in Ubud, introducing an innovative approach to Indonesian cuisine, bringing together local flavours and international techniques. Spice by Blake is the logical next step: a place where Balinese authenticity meets international allure.
The power of collaboration with Chef Axl Tan
Next to Blake is Chef Axl Tan, who joins the creative team with his Indonesian roots and impressive experience at Restaurant Ster and Restaurant Ají Rotterdam. Axl is a former student of Blake's and knows better than anyone how to combine Indonesian flavours with refined techniques. Together, they bring a unique menu that pays homage to the Spice Route and the rich culture of Bali.

At Spice by Blake we work with partners who share our vision of quality and taste. Our wines are carefully selected in collaboration with VinVin and Vinites, who are also responsible for all our house wines. For our beers, we rely on Heineken, and for the day-to-day basis of our kitchen we collaborate with Sligro, which ensures a reliable supply of high-quality products. Together, we build a kitchen in which consistency, craftsmanship and flavour are central to focus on what really matters: the experience on the plate.
