Ají will remain open until Boxing Day, then temporarily close its doors for a special transformation
Restaurant Ají, for years a culinary destination on Pannekoekstraat where the flavours of Latin America and Asia converge, is entering the final phase of a special chapter. Until Boxing Day, Ají will remain open as guests know and love it. After that, the restaurant will temporarily close its doors for a sweeping, tasteful transformation.
Because while Rotterdam ushers in the new year, chef Axl and Brandon travel to Bali. There, they will train intensively for several weeks under master chef Blake Thornley, known from Mozaic Ubud and renowned worldwide for his refined, adventurous cuisine. During this period, Ají will undergo a culinary transformation in Rotterdam to get ready for a new culinary identity.
Ají becomes... Spice by Blake
In mid-January 2026, the restaurant officially reopens as Spice by Blake: a new name and a new era, but with the same passion for exceptional flavours, hospitality and the merging of cultures. The menu will have a distinct Balinese signature, with sophistication and storytelling on every plate.
A tasty farewell, one more month of Ají as you know it
For regulars and newcomers alike, December is the last chance to experience Ají in its current form. A month to make memories, taste favourite dishes one last time and enjoy the kitchen's familiar, bold signature together.
And of course: Ají is also fully open during Christmas this year. Guests can join us on Christmas Eve, Christmas Day and Boxing Day for a festive lunch or dinner full of warm, distinct flavours.
